Delicious, almost on par with Terralta Reposado for me. I tend to like the more mineral offerings of El Pandillo and this is a great expression of that. 8-9 months reposado but, as with many offerings from El Pandillo, it just adds a perfect layer of wood, vanilla and a buttery feeling.
Great Repo. Incredible balance of agave, citrus, alcohol and a touch of light wood.
Legit tequila done right.
Just too much black pepper in the finish. Geezus its Serrano pepper heat
Nose: Sweet, spicy, caramelized agave nose. Butterscotch, almonds and a touch of citrus in the backup choir. Flavors: Extremely light oak treatment. Tons of pepper (white), and spice, with a lingering anise note. I’m picking up some rye notes. Some herbal/vegetative nuances - sweet pickling cucumber? Rich caramel oily mouth feel. And some brininess. Another home run from #1579! Thanks JG for the birthday gift!
Aroma : Cooked agave, black pepper, and some peach. Classic Pasote minerality here as well. Taste : Lots of cooked agave with some minerality, but not quite as much as the Blanco. Some pepper and spice here as well as some light peach. Oak is noticeable but doesn't stay on the palette long. Oily, but not necessarily a "full" mouthfeel. Finish : Medium/long and prolongs some flavors like cooked agave, and plenty of black pepper and cinnamon.
Great repo. Floral, agave, and a touch of vanilla on the nose. All that plus grapefruit and minerals in the flavor, with a smooth sip and slightly spicy and long finish.
I absolutely love this expression from Felipe’s line of Pasote. It retains the “mineraly” flavor from that captured rainwater and cooked agave of the amazingly delicious blanco expression, and imparts the herbaceous, vanilla/caramel of the aged juice in this delicious reposado. I would put this up against any reposado who utilizes the traditional methods of harvest/cooking/crushing/fermentation/distillation methods.
Just a touch of oak, it’s nice to see a restrained reposado. Tons of bubblegum and marshmallow, this is a crowd pleaser.
Lots of orange/tangerine. Starts in the nose with some alcohol, carries into the body and through the finish. A tiny bit muted all the way around.
Very little on the nose, a little baked agave and some pepper
Very pleasant aroma. Although I expected it to taste better.
Aroma= Grapefruit Flavor=
mildly fruity nose, sliced ripe berries. way more oak than the light color and nose would indicate. sweet too, like honey syrup. balance of sweet bitterness remains through finish.
Glass: Very pale straw color. Lots of large tears form, streaking the glass with thick legs, leaving constellations of pearls hanging. Aroma: An initial bright green “funk” dominates. Then warm baked agave presents, along with the green/vegetal spice/funk and black pepper—a subtle mixture of mints, peppers and citrus. I’m also finding grapefruit, with notes of minerals, brine and vanilla. Entry: Smooth and slightly oily. Coats the palate without sticking to it. Nice spice on entry that grows into the finish. Flavor: Very agave-forward. Baked agave with a touch of sweetness, like a kind of peppered gingerbread cookie, but probably not as sweet. The minerality and brininess are still there with a little tang to it, like olives. Bright spice and mineral notes, with a big pepper kick. The huge flavors from the blanco have been rounded out. Where the blanco felt like something very bold and completely new, this reposado feels like something a bit more familiar. This is aged for 6 months in American oak barrels that are, on average, 40 years old. So all of the tannins and strong oak flavors have been depleted from this wood, adding only hints of vanilla. Finish: Initially buttery, then dry in the center palate with a wet mineral effect on the sited. There is a bit of heat going down, as well as in the retro-nasal, but the heat feeds into the peppery effect on the palate providing a general warming feeling. Moderate to long in length. Conclusion: A proud tequila, a bold repo—hip, funky, spicy, interesting—and an excellent value for this quality at $45. Felipe Camarena is one of the very best distillers in the business. A third generation distiller, he is growing his own agaves near the highest growing altitudes within the denomination of origin. With his dual engineering degrees, he has likely developed the most innovative and sustainable production facility at his El Pandillo distillery in Jesus-Maria.
Aroma: agave, citrus Flavor and finish like frapefruit, slight sweetness but bitter.
Nose - Barrel spice and agave
Slight wood on the nose. Cooked agave. Taste wood again and cooked agave. Nice finish a bit of spice
Light agave smell. Hint of alcohol and butter. Nice legs. Oily feel. Taste cucumber, butter. Light pepper starts coming through midway. Slight heat but comfy. Light flavor overall. Slight mineral water flavor. Nothing explodes at you. But would drink again.
I’m trying to like it….I’m not big on the mineral flavor.
Mild agave nose with some vegetal and mineral hints. This begins to shine with the flavor which has more agave and a little oak and pepper. It is best at the finish with good agave and strong pepper. If you like a solid pepper finish that is not alcohol burn, this may become a favorite.
Mineral nose is mellowed out from aging. Flavor is similarly mellowed with slight hints of baking spices and pepper. Finish is brief and very slightly warming. All the character from the Blanco is very apparent, but is subdued.
Vanilla!
nose is very neutral and light, nothing bold. light agave, mellow oak, and hints of something smokey.. palate I alot nicer, a whole Lotta minerals, fresh cucumber and velvety agave with hints of barreled bourbon (getting a hint of makers mark) alot of fine desset like glazed pear and apple with cinnamon and vanilla exquisite and fine. finish was also a bit light. light pepper, light minerals. its just nice.
Pasote Tequila is a new brand made by Felipe Camarena in his distillery, El Pandillo. Anything that comes out of this cool distillery is pretty much guaranteed to create some excitement. Pasote does not disappoint.

Aroma - minerality, black pepper, rosemary, clove. Flavor - olive, minerality, thyme, black pepper. Finish - very easy to drink with a long lasting peppery finish. Almost no chest burn and very soft mouth feel.
