Some slight bitterness initially that I attribute to the use of a stainless steel pot still with no copper elements. Some minerality from the deep well water comes out on subsequent sips. After sitting for 8-10 minutes this has opened up with a nice fragrance of agave and some caramelized notes. The SS pot still drags this down and keeps the score below the 90 point threshold.
