Cooked agave with some oak on the nose….. slight minty cool burn with hints of citrus
Very nice repo. Nice with the loads of agave up front leading right into light citrus and vanilla notes. A tad bit of earthiness but Not a whole lot of barrel in this one but loads of pepper on the back end that lets you know your drinking something. I like this. Very good.
obvious cooked agave with big presence of citrus on the aroma followed by mineral, oak, pepper. overall buttery on the nose. some orange on the nose develops later. citrus hits early on in the flavor with the natural cooked agave sweetness. oak is also present just to let you know it's there, but not overpowering. orange, pepper, some hint of vanilla. very good mouth feel, as it's oily/buttery on the tongue
Really like this Reposado, as it opens up, cooked, sweet agave, light caramel and vanilla. Great finish

Batch 12: smells amazing with fresh orange popping out. Taste agave, orange, cinnamon, light oak. A little short and light but overall a very nice Reposado.

An intense citrusy aroma on the nose, quite a definite presence of nice cooked agave. The overall aroma is so bright that is more reminiscent of a Blanco than a Repo. I love it! A soft an oily mouthfeel that leaves beutiful legs on my Glencairn. Quite bright on the palate as well, it must be young. The bottle indicates it's aged more than 3 months and judging by the light presence of wood I'd say it actually isn't much more than that. It's quite agave forward which I love, with light notes of vanilla and some orange blossom. It reminds me of Ocho although this is a valley juice. This is an extremely nice reposado, very clean and quite smooth, with just the right amount of alcohol spices to make it interesting. You can immediately tell there are no bs additive in this one and just a very light sweetness from the wood. It ends with a medium to long finish which keeps resonating with cooked agave till the end and some mild spiciness. It's really a very solid reposado, although I must say it lacks the remarkable complexity of its blanco edition. Contrary to the Blanco you can't really detect the bagass fermentation complexity in the repo, it's much more straight forward. Very good nonetheless.
Really balanced nose with a nice balanced barrel presence and cooked agave and finished warm with a lingering vanilla and buttery aftertaste very pleasant sweetness, slight swert li getting finish. Just wished the price was a bit less but having visited the distillery and learning the brand more I def got a better appreciation for this project
Great representation of a reposado. 1123 flavor profile. Agave, pepper, caramel, vanilla.
Mild flavor. Very clean and light.
The barrel influence is perfect. Toasted caramel and vanilla on the nose. Delicious agave on the palette with the barrel taking off any bite. Enough alcohol heat to give a sparkle and lingering complexity to the finish.
Vegetal, earthy Smoky campfire Carmel butterscotch
Very nice agave forward aroma. When it first hits the tongue you can taste the oak. It never gets any stronger, like you’d expect, but it does linger throughout. It then has a smooth sweetness with strong agave notes, maybe a little citrus. I don’t taste the vanilla like others have. There is a nice pepper bite on the finish. For a reposado, I’d say it might be closer to an anejo with a more aged profile. I was gifted this bottle so I’m not sure of the value. I’ll drink it again and I’m half expecting it to taste a little more smooth after the bottle has been open a bit.
Grabbed a bottle of batch 13 at Old Town in SD today. Initially almost had a mezcal aroma, but opened up to slight oak and agave after swirling. Vegetal, citrus and agave tastes. Absolutely lovely reposado.

Tasted at Elijah’s. Tropical fruits, baking spices very prominent.
Aromas of oak, cooked agave and citrus transition into flavors of mature agave, orange and black pepper. A very smooth and medium lasting finish of oak and buttery orange peel with a touch of alcohol flavor at the very end. Great sipper.
Tried batch 9 and 12 at the same time. Liked the nose on 12 but palate on 9. Repos are very hard to do properly. This one was just right.

Sweet and creamy taste, oily and buttery feel, followed by a punch of cinnamon that sits on the tongue. Very nice reposado for sipping!
Siembra Valles Reposado $65-$75 USD Summary: An excellent sipper. Delicate, yet complex and balanced. I highly recommend it. Aroma: Bright and delicate. Cooked agave and the mild, sweet fragrant aroma of orange citrus and red fruit jump out front along with the minerality of the soils. Light oak, light butter, and baking spices with a splash of butterscotch. Taste: Soft, oily mouthfeel with a light cinnamon and pepper heat on the entry. There is a natural clay earthiness that reflects in a clean and balanced taste. Light oak, light vanilla-caramel, light orange citrus with a mild cinnamon and pepper spice note. A tinge of mint shows up on the back end. Finish: Medium to long. Anise, mild sweetness, and white pepper heat linger with a simple warm cinnamon spice note.
Appearance: A good bit of light honey/straw color to it. Nose: wonderful amount of mineralality, a lovely wisp of bright agave. Classic 1123 vegetal aroma. Barrel influence is present but not overt. Vanilla, caramel, spice and a bit of citrus. Balance leans toward agave and I like that. Flavor: Some new fruity flavors come through. More agave, tree fruit, pepper, citrus. Finish: medium-long lots of oak, vanilla and spice. I miss the earthy and chocolate flavors from the Siembra Valles blanco. Maybe they are there and I’ll find them in a different night and a wine glass. Tasted w glencairn.

Batch 12. Amazing reposado, the wood is intense with high tannins in the first sips but over time the natural sweetness from the barrel takes over. If you like the aged offerings from cascahuin you’ll definitely like this one.
