A clean, straw colored blanco. Nose: Big saucy, sweet and spicy notes immediately jump to the forefront. Baked pineapple upside down cake, comes to mind: The richness of slow cooked pineapple, melted butter & crumbs, caramelizing brown sugar, allspice and cinnamon. An additional smokey pepper note and hints of vanilla creaminess. Fresh cut orange roses. A faint smell of attic dust. A bit of cider. Just the faintest suggestion of Mezcal funkiness, campfire smoke and wood influence at this stage. Flavor: White pepper and cinnamon heat blast out of the starting gates and refuse to back off. But the heat is a perfect foil to the fruit, agave, vanilla, anise, almond and salted melted butter - making for a rich and oily palate experience. In the mouth, more than in the nose, you find some its Mezcal heritage (having spent 28 days in a Don Amado Mezcal barrel). Then further stabilized in Stainless Steel for 30 days. Finishing impressions: Some minerals, grassiness and floral sensations show late in the finish. A lot of sweetness for 24 Brix agave - I have to think the barrels contributed to this. On the one hand, this is a bold, brash and feisty sip. On the other hand, this is a silky, suave and easy sipper. A great collaboration.
