Barrel 2 | Hot on the palate at 45% this is a full throated product that has some serious pepper and tip of tongue burn. I think the ethanol dominates and hides much of the agave present or any barrel influence.

Barrel 3 (43% abv) | Honeysuckle, chicory root, and barrel influence on the nose. Warm, bright flavors. Fun viscous mouth feel! This is fun. Slightly over proof and I like it =)

Barrel 4 | Nose: A sweet, round, fruity initial impression. Apple cider, mangoes, bananas, agave and dried apricots. Complimentary nutmeg, cloves and cinnamon. Vanilla and almond pastry cream. Citrus and an earthy crisp note. Flavors: Intense depth of flavor to the agave and French oak marriage. I’m not always a fan of French oak - but this treatment is mellow enough to be an asset. Sweet, silky and balanced pepper, spices and salinity. The dried fruit and almond notes follow from the nosing.

Barrel 3 (45% abv) | Nose: Dynamic nose. First pass brought an agave/oak/lactic funk/cinnamon aroma. Next, loads of agave and tropical fruit nuances: pineapple, bananas, mangoes, melon and lima/citron. Anise, cinnamon and nutmeg from the spice aisle. And an earthy, mineral tingle to the nose. Flavor: Punchy spices and warming black pepper pair up blissfully with the fruity agave. Oily. Silky almond paste with a feisty attitude. Butterscotch with some brininess. Finishes with a farewell note of dark chocolate and cafe au lait with just a kiss of chicory.

Barrel 3 (43% abv) | Nose: Ripe pineapple and a hint of strawberry/kiwi. Round barrel spices comprised of cinnamon, allspice, vanilla, mint, and green peppercorns in brine. An oak note with a suggestion of caraway Flavors: Caramel, toffee, dark jammy fruit, salinity, and robust pepper can’t hide the rich agave presence. All this punctuated with vivacious barrel spice.

Barrel 2 | Nose: Pert and vibrant nose. Crisp fruit and rich baked agave presence. Pineapple, cherries, green banana and peach pit. A floral aroma weaves in and out. Enticing barrel spice, vanilla and white pepper blend. Mint and oregano finish up the aromas. Makes your mouth water. Flavors: Oily pleasant mouth sensation. Abundant rich agave marrying with butterscotch and salted toffee. Trace citrus and anise. Lively cardamom, white pepper and cinnamon tease the tongue. Vanilla and almond paste retrohale.

Barrel 1 | Nose: Warm baking spices: cinnamon, cloves, vanilla with a dusting of nutmeg. A touch of barrel oakiness. Grilled pineapple basted with butter. Some ripe red fruit, a hint of jackfruit and classic Tahona Blanco barnyard funk. Flavor: Silky, buttery texture. Vanilla and anise and finely ground white pepper. Caramelized sweet agave. Some heat on the palate with trace tannic bitterness.

Barrel 1 | Barrel 1 Nose: Aromas are pushed right out the glencairns glass. Delicious herbacious nose , with cooked agave, clean crisp oak, wet cement, lightly salted with lime and some brine. Palate: Agave, light oak, mint, grass, vanilla, black pepper, full mouth feel. Finish: Finish lingers nice but lightly with some mouth burn at the end. Love it.

Barrel 2 | Lote 22 141120. Color: pale yellow. Nose: intense sweet cooked agave! Citrus, light pepper spiciness, floral. After 15 minute in the glass a light wood spiciness emerges. Palate: excellent balance of sweet & sour, sweet cooked agave, pepper spiciness, mineral. Finish: is medium to long, the balance between the flavors mentioned above is very tasty! Wow!

Herbal and grass notes are almost non-existence, which makes the agave sweetness sweeter! Again, sweet agave white rock sugar! Palate & finish: a nice balance of sweet & sour with spiciness dominating in the medium to long finish.

Aroma - Cooked agave, hay, oak, minerals, orange peel, cinnamon, and a slight note of Carmel Flavor - creamy mouthfeel with notes of cooked agave, cinnamon, and orange peel all dancing together on the pallet for a complex and unique experience. Medium finish that was very enjoyable. I wish this bottle wasn’t so hard to source, or expensive to source. Thankful I had the opportunity to try it.
