A blend of different Cascahuin techniques, it’s the most underground pit cooking that pokes through the most on this one—definitely carries a touch of smoke through. Sweet, earthy, mineral, and smoky.
This drinks really really well. The flavor definitely gives me a lot more than the nose. Delicious and beautifully executed. Took off a couple of points for price being a bit steep in today’s HP blanco market
Kind of a neck pour. I opened the bottle 3 days ago and gave a friend a 2 oz sample but didnt try it. So I'm trying it now... Nose: Grassy, minerality, cooked agave, anise, mint, earthy with a mild smokiness and a little alcohol Palate: sweet cooked agave, smokey, vegetal, mint, citrus and pepper Finish: warmth with citrus and pepper Legs are gorgeous PS tasted a little more with mac n cheese, and it paired really well!!!
Beautiful agave nose. Signature cascahuin palate with a beautiful pepper finish. I dig this
I did a high-proof tasting at a bar in Puerto Vallarta. Aroma of cooked agave, butter, minerals, herbal and a hint of smoke. Flavor of cooked agave, smoke, herbal and vegetal. Medium-long finish and no high-proof burn.

Another winner by Chava, high proof, mint, and minerality at the same time. Balances out once it opens up

Another great bottle from Chava and the team. I was able to get from the distillery so the price was right. If you’re paying crazy secondary prices then it will def change the value component but a delicious blanco as Chava reminds us how incredible he is.
Beautiful nose of agave. Floral, minerality, minty, jalapeño, green pepper. The best nose you can imagine. Beautiful palate of agave and then jalapeños and peppers. Beautiful mouthfeel can’t wait for a bottle of this.
On the nose, first impressions: cooked agave, nice minerality/an earthiness to this one, can smell the terroir, some herbal notes, maybe parsley/oregano. I will say it was somewhat muted on the nose for 49% to me. On the pallet: nice sweet cooked agave, lot of minerality, some baking spices/anise, some buttercream/caramel notes, nice medium finish, nice mouthfeel, not too thin, not to oily. Ultimately a quality 1123 product, very tasty but very also unique for them recently, maybe by design. Id easily keep it on the shelf for MSRP/secondary is a bit steep. Bottle opens up a lot after 24/48 hours, second sitting was much more enjoyable than first sitting.
Smooth and a very subtle Smokiness finish. Purchased at $195, which is a great price - especially since I’ve seen others resell up to $400

One of the best blancos around. Wonderfully complex flavors with a long finish. A little more smoke than normal
Nose: strong aroma, raw and cooked agave, light smokey, citrus, mineral, light mint. Palate: agave forward, mineral, vegetal, smokey, minty, anise, citrus, light butter. Finish: light medium. Overall, amazing blanco, from my favorite distillery! Wish it had a longer finish!!
A Chavas classic. I get a ton of minerality, savory barbecue smoke, chipotle peppers, and sweet cooked agave. It’s an amazing tequila, full stop. One of my favorites. If you can get this for less than $200, spring for it.
Another banger from Cascahuin. Great floral nose, hint of mint and anise. Flavor of sweet cooked agave, lemon zest, anise and a hint of smokiness. Definitely a rare and pricy bottle but the quality is certainly there. Very well done!
Aroma and flavour were excellent. That being said what set this wine apart was its body and finish. Oily and weighty leaving a lasting flavour. Price might be an indication of what to expect from well made signature tequilas
I purchase mine for $77 at the distillery and I’m hearing it’s close to $200 in the US. Wtf

Aroma: little more mineral than Cerro Taste: absolute agave bomb Finish: energizer bunny- it keeps going Tasted with Cerro, both are absolutely amazing

LOT: 588 This is the yearly anniversary edition of Cascahuin, and it seems that they went back to the legendary 11 Brix formula for this one. Even tough this is a bit lower graduation, at 49º or 98. I must say I’m typing this quite excited I just opened it and just had a small whiff. After 5 minutes of being poured; Aroma: this is quite the Cascahuin smell. Wet cement, petrichor, floral kind of lavander, some wood astringency, cooked agave, sweetness, alcohol but not over powering for a 49, some anise. Taste: quite sweet, very floral, some wood astringency, quite complex. I can tell it still want to open up a lot. After taste: citrus like orange peel, black pepper. I let it open for 30 minutes. Aroma: quite similar, I don’t detect changes. Maybe a little lemon citrus that wasn’t there before. Taste: it’s unique, really sweet, very floral like lavander, wood, some citrus like lemon or orange peel Aftertaste: black pepper and oily citrus. I let it open for another 30 minutes. Aroma: I now get a super subtle smoked aroma in the background as well. Taste: at some moments it even tastes like honey made with lavander or mesquite. This is super special, Salvador has done it again. I will revisit after this has evolved more and after making blind tastings.
Cascahuin Destino blanco 49% LOTE 588, bottled on 021224, tasted on 12-8-24. Aroma: cooked agave, hint of smokey sensation which covers up some aromas, light green vegetal notes, light earthiness, acidity, light citrus, hint of sourness. The smokey note is lighter than the Aniversario and Cerro de Luz, which lets more aromatic notes shine through. Palate: confirms aromas perceived, however, the ethanol sensation is medium high, which I am confident like most recent Cascahuin releases will improve as the tequila is homogenized in the bottle. The green vegetal notes also seem slightly harsh due to high ethanol sensation, which I hope improves and becomes more aromatic once the ethanol sensation is more balanced. Ok, I am being really picky, but because it’s Cascahuin! Finish is medium to long, cooked agave note is sweeter on the finish, light green vegetal notes with a hint of smoke, light citrus with light earthy notes persist. I have high expectations for this tequila once it becomes more homogenized! Which I will gladly be tasting regularly and adjusting points accordingly. 86 points.

Great nose with cooked agave, vegetal/herbal and citrus. Finish has vegetal notes with cooked agave and nice heat. Could easily go into the 90s on this rating. The price pint held me up a bit at just over $200
