There’s so much going on with the aromas and flavors I may need to revisit. I get sweet cooked agave with some mint, and only a slight hint of lactic funk. Complex for a blanco. I’m curious what this tastes like before resting in wine barrels.
Aroma is full of flavor! Agave, alcohol heat, rose petals and peach nectar. Really good! The taste is strong as well. Agave and a lot of black pepper. Spicy! The finish fades a little bitter but isn’t bad.
I love the concept but believe the execution could improve. Similar to El Tesoro and Fortaleza which both ferment in wood this carries that a step further and ferments in two types of wood, pine and oak. A slow fermentation at low temps is touted as a unique part of the Cambio process. The cooked piñas are macerated with a true tahona and distilled in a SS/Copper hybrid still. These hybrid stills are gaining popularity as pure copper is expensive. Distilled close to proof this is then rested for a short time in French Oak barrels previously used for wine. This smells more lactic than it tastes, elements of the barrel resting become much more apparent after sipping but this has an over arcing bitterness that holds the score back. Nice 46% presention carries a ton of flavor from the various production elements but after sipping and sitting with this for some minutes, it almost seems TOO busy in the mouth.
This is an earthy tequila with pepper and grassy notes. Plenty of minerality. Slightly malolactic. On the tongue I get agave and a bit of malolactic flavor. It is briney with alcohol and white pepper. It is good but not exceptional. I’d drink it again but there are many I would rather drink.
Nose: earth / pepper / grass / vegetal / bell pepper/ sage / lactic / mineral Taste: sweet agave cooked / earth /pepper / peppermint / apple / citrus/ bell pepper / sage / licorice/ jalapeno/ salt Finish: watery wet mouthfeel/ slight cool water effect / lingering pepper and agave/anise This blanco is high proof at 46%abv - a very decent first tequila by a new brand. It needs some tuning as they move into new batches.
Very thick and juicy. Tons of legs in the glass. Cheesy/funky aroma riding on top of herbs and agave. Crisp taste of agave, pepper, and a lot of mint. Hides the ABV well. Really nice effort.
Cambio blanco Nose: leaving my mouth open when i smell this, and the nose is softer than when I tried it before, more agave. some funk/malolactic notes on the low nose, some alcohol on the high nose Palate: it is definitely better than the first time i tried it. But still not a favorite. Some cinamon, agave, funk/cheese, bitterness and heat.
Citrus fruit nose? Bright nose, unique palate and interesting finish. I really like what Cambio is doing and love that the Blanco comes in at 46%
Small tasting. A bit lactic and certainly has its own vibe. The wine barrel is doing its thing too.
Very malolactic on the nose. Cheese. Smells lovely On the mouth the cheese comes through to start and then sweetness of agave. This is great. All rounded out with the oak
Aroma: dried fruit, orange blossom honey, mint, anise, minerality, barrel spice. Flavor: cooked agave, orange, mint, vanilla, cinnamon, barrel spice. Somewhat oily texture and really easy to drink.

Been wanting to try this for some time. Finally got it. legs and tears beautifully strolling down the wall of the glass. The nose....sweet cooked agave...earthiness, soft and somewhat floral. Now for the sip...OMG!!!! WHAT IS GOING ON HERE?!!! This is amazing! Very complex. sweet floral agave. pepper, honeyish, maybe a malactic flavor...I don't know. I'm not the expert...I just know what I like. I really like this. I knew I wouldn't be disappointed. Buttery mouthful. wine, caramel....again complex....I love it. very delicious and the nose is still so giving as I go into the glass again. the flavor is lingering on my palate. thank you Chef John Des Rosiers for keeping a vigilant eye on a beautiful product. stone ovens,tahona,wood, copper! water, agave, yeast!!! Can't ask OR WANT anything more!!!
Hooooly moly the finish on this is amazing. And the nose comes off very fruit and anise. It's great for the value. Blown away by this Blanco. The finish stays with you for a VERY long time. The viscosity on it is great!
Good! A little boring but I can’t say anything bad that’s for sure.
Tasted in Glencairn Aroma: Lactic immediately on the nose followed by Sweet Cooked Agave. Citrus and Fruity notes of Tart Apple and Pear. Cinnamon notes. Mineral and Earthy. Vanilla and light Oak. Slight Herbal with a touch of Sage. Taste: Sweet Cooked Agave, Lime, and very Lactic out of the gates. Black Pepper with a Spicy touch of Cinnamon. Tart Apple and Pear are here, too. A touch of Anise brings a slight bitterness, but surrounding the other flavors, it's fine. Finish. Long Agave, Lactic and Black Pepper run.
On the nose, there is a bit of ethanol, some green vegetal note, and a little pleasant funkiness. The taste is very pleasant with sweet agave syrup note, which rolls into some mint and some pine tree notes of the wood and the pine needles. Very interesting and a departure from a lot of other Blanco tequila. The wood resting is notable, but it’s still clean and crisp and not overly buttery. First crack was not too good but with time this has become a hitter.
This is a good buy at $50. Light funky cheese on the nose, which I love…. Crisp and clean. Initial sweetness on the tongue. Spicy peppery alcohol heat. Then some anise bitterness with some mint. Pretty decent finish.
Treid sample at liquor store 6/1/24. Great blanco. Nice oily agave flavor. Some citrus and pepper. A little heavy on the alcohol.
