An oldie from Destilería Cascahuín, 2006 stamp. Some evaporation. Nose: Starts with a mild nutty/wood note. Follows up with cloves, vanilla, nutmeg and rich ripe agave. On the herbal vegetal side are celery, fennel and a hint of pine. Flavor: A fleeting floral undercurrent gives way to buttery toffee, licorice and medium pepper. It seems to bloom in the mouth, giving you the sensation of eating a creamy, rich, decadent dessert. Nice mouth feel. Finish may have suffered a tad from the less than perfect fill level. Nonetheless rewarding. Neck tag says, “Caballo de Hacienda, where we wait patiently 9 years so that we reach the total ripeness.” Don’t see that these days!

Bottle has a 2007 tax sticker on it. Aroma is pleasing. Agave, earth, anise aromas. Agave, vanilla, butter flavor. Medium light mouth feel. Well balanced. Super old bottle, not being made anymore. Cork broke while opening, so if you find one of these, be careful!
