Here is the information I received on this product from a sales sheet before tasting... Tequila: Made from 100% Blue Weber Agave Average age of Plants: 5-6 years Cooking: Historic brick oven and autoclaves for 36 to 48 hours Fermentation: German yeast strain for 72 hours Stabilized: tequila subjected to -2C degrees for 12 hours to preserve clarity Flavor development: passes through oxygenation system for 48 hours for smoothness and to preserve agave flavors Blending: to create the unique taste profiles of each of the Tequilas we asked the distillery to create something better. Our formula is a blend of 50% highland region and 50% from the Lowlands region. This gives us the flavor notes from each region plus the combined cooking methods giving us our unique base profile distinctive to our Tequila. Now onto the review... Nose: bright sugary notes lead the way. Touches of alcohol and mild cooked agave after. Rounds out with lots of creamy vanilla, fresh flowers, and mild herbaceous notes. Taste: Cane sugar sweetness again jumps out. Light raw agave but overall the flavors are mild. Somewhat simplistic but I didn't get any noticeable flaws. Lacks depth in the taste and mouthfeel categories
