Tasting notes from bottling date at NOM 1414: Cooked agave, sweet citrus, orange, herbal, NOM 1414 bitterness, minty, estery finish. Fruity nuances appear but are not as strong (pear, green apple). Complexity low-medium. This profile uses champagne yeast and a natural stabilization period. Stay tuned as it will be released in Jan 2024

Had a wee sample from work. The agave presence is soft compared to other offerings from 1414. A little bit of mint, some bright fruit, and also some minerality. I’ll need to revisit once it hits the shelves.
