NOM 1079, marbete is from 2002, Mexican 35% abv. version with a red wax sealed cork, tasted on 10-8-23. Color: light yellow. Aroma: cooked agave, acidity, light pepper, light earthiness, clean & crisp. 20 minutes later the agave note becomes sweeter. Light vanilla, light oak. Palate: confirms aromas perceived, it has a winey sensation like when smelling the fermentation tank while the agave is fermenting, good sweet sour and acidic balance, although short. Finish is short to medium, fermenting agave, light earthiness and good sweet sour and acidic balance persists but not too long.
